Fall for Mussels

Fall is the perfect time for mussels. As the temperatures drop, kids' activities go up. Mussels go from fridge to table in 20 minutes and this lean protein, high-iron shellfish will fuel hungry kids between school activities and for homework.

Try steaming them in beer or grilling them and kick off your tailgating party right.

 

 
Mussels with Chorizo and Smoked Paprika
Dinner Club Winner

Preparation Time: 10mins
Cooking Time: 5mins

Ingredients

5 lb fresh PEI mussels

2 tbsp olive oil

3.5 oz. dry-cured chorizo sausage, thinly sliced

2 clove garlic, minced

1 tsp spanish smoked paprika

1 tbsp tomato paste

1 tsp sugar

1⁄2 tsp dried chili flakes

1⁄2 tsp ground cumin

1 cup white wine

salt and pepper to taste

juice and zest of 1 lemon

fresh cilantro, finely chopped

Instructions

1. Stir PEI mussels in colander under tap. Tap any mussels that are open. Discard any mussels that do not close in response to the tap. Set aside.
2. Heat olive oil in a large pan over medium-high heat. Add chorizo and saute until it starts to brown. Add garlic, paprika, tomato paste, sugar, chili flakes and cumin. Stir well and cook 2 minutes more.
3. Add white wine, salt and pepper and lemon juice. Bring to a simmer, then add mussels. Cover and leave to steam for 5-7 minutes, until mussels open. Discard any mussels that do not open.
4. Transfer mussels to a serving dish and top with chopped cilantro and lemon zest. Serve with slices of crusty bread.

Beer Steamed Mussels-
Tailgaters’ Choice

Number of Servings: 4
Preparation Time: 10mins
Cooking Time: 15mins

Ingredients

2 lb fresh PEI mussels

1 tbsp butter

1 onion, chopped

1⁄4 tsp salt

1⁄4 tsp pepper

1⁄2 lemon

1 bottle, beer

2 green onions, sliced
1. Stir the fresh blue mussels in a colander while rinsing in tap water. Tap any mussels than remain open and discard those that don’t close in response to the tap.
2. Heat oil in a large saucepan. Add 2 tbsp (25 ml) of the onions and garlic. Sauté until softened, 1 to 2 minutes. Add the tomatoes, wine (or chicken stock), basil and Tabasco sauce and bring to a boil.
3. Add the mussels. Cover and steam until mussels open, 3 to 5 minutes. Discard any mussels that do not open.
4. Transfer the fresh blue mussels to a serving bowl. Stir vinegar into the tomato mixture and season with salt and pepper to taste. Pour over mussels and sprinkle with remaining onion. There are two options with this recipe – remove mussel meat and add to the sauce or add the whole mussels to the sauce.
5. Serve with pasta.
