Ingredients
- 1 cup fresh blue cultured mussels, cooked
- 2 tbsp butter
- 2 tbsp flour
- 1⁄2 tsp salt
- 1⁄4 tsp pepper
- 1 cup milk
- 5 eggs
- 1⁄4 cup water
- 1⁄4 cup cheddar cheese, grated
Instructions
1. Rise fresh blue cultured mussels in tap water.
2. Melt butter in a saucepan; stir in flour, salt and pepper.
3. Slowly pour in milk, stirring constantly, until sauce thickens. Stir in mussels and simmer until heated through.
4. Combine eggs, water and salt and beat well.
5. Melt butter in a frying pan, then pour in the egg mixture. Cook until bottom is lightly browned and centre is just set; then rollup and place in a baking dish.
6. Sprinkle with cheese; then pour sauce over the cheese
7. Bake at 350 degrees F for 8 to 10 minutes.
Notes
Serve rolls and a tossed green salad with this richly flavoured omelet.
