Blue Mussel Marinière

Ingredients

  • 5 lb fresh cultured blue mussels
  • 1 celery stalk, coarsely chopped
  • 1⁄2 cup white wine
  • 1 clove garlic, diced
  • 1⁄4 cup green onion, chopped
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  1. Rinse fresh blue mussels in tap water.
  2. To a large lidded pan, add white wine, chopped onion, celery, garlic, bay leaf and thyme. Bring to a boil.
  3. Add fresh blue mussels to boiling liquid. Cover and steam until mussels open, about 5 to 7 minutes.
  4. Spoon the fresh blue mussels with shells into a large bowl, pouring broth over.  Serve with french fries or your favourite bread.
