Ingredients
- 1 1⁄2 lb fresh blue cultured mussels
- 2 1⁄2 tbsp olive oil
- 2 scallions, chopped
- 1 stalk, celery, chopped
- 1⁄2 green bell pepper, pith removed and sliced
- 2 clove garlic, minced
- 1⁄4 cup dry white wine
- 1⁄2 cup water
- 1⁄2 cup tomato sauce
- 1 tsp worcestershire sauce
- 1 tsp cayenne pepper
- 1 tsp oregano
- 1 tsp basil
- 1 tsp thyme
- 1 lemon, cut into wedges
- small handful parsley sprigs
Instructions
Mussels:
1. Rise fresh blue cultured mussels in tap water.
2. In a large saucepan or skillet, heat the oil (1/2 tbsp). Stir-fry onions, celery, green pepper and garlic (1 clove) until tender crisp.
3. Add mussels and tomato sauce mixture. Cover and bring to a boil in a pot. Add wine and water (1/4 cup). Cook, stirring constantly, until all the mussels open completely, about 5 minutes. Discard any unopened mussels.
Sauce:
1. Heat oil (2 tbsp) in medium saucepan. Add garlic (1 clove), sauté for 1 minute.
2. Add tomato sauce, water (1/4 cup), Worcestershire sauce, herbs and spices.
3. Cook over a medium heat for 5 minutes.
4. Pour sauce over mussels and serve on a large warm plate garnished with lemon wedges and parsley sprigs.
