Ingredients
- 2 lb fresh blue cultured mussels
- 3 eggs, beaten
- 2 cup soft bread crumbs
- 2 lemons, quartered
- 1⁄4 cup water
- vegetable oil for deep frying
- cocktail sauce and tartar sauce
- parsley
Instructions
1. Rise fresh blue cultured mussels in tap water.
2. Simmer mussels with water in a covered pot until they open. Strain and remove mussel meat from shells. Discard any mussels that do not open.
3. Dip meats in beaten egg and then in bread crumbs (or use a prepared fish or clam batter or tempura mix).
4. Fry in deep fat at 375 degrees until golden brown. Drain on absorbent paper and serve on a hot serving platter.
5. Garnish with parsley and lemon quarters. Serve cocktail and tartar sauces on the side.
