Island Steamed Blue Mussels

Ingredients

  • 2 lb fresh cultured blue mussels
  • onion, chopped
  • 2 clove garlic, minced
  • 2 tbsp oil
  • 1 cup white wine or chicken broth
  • 2 tbsp parsley, chopped

Instructions

  1. Rinse fresh blue mussels in tap water. 
  2. In a large saucepan, sauté onion and garlic in oil. 
  3. Add fresh blue mussels and wine or broth. 
  4. Cover and cook for 5 to 7 minutes or until the shells open. 
  5. Serve garnished with parsley.
