MAD Mussels

Ingredients

  • 2 lb fresh blue cultured mussels
  • 1 lemon juiced
  • 1⁄2 cup water
  • 1 tsp chipotle liquid
  • 1 tsp chili powder
  • 1 egg
  • 1 cup ice cold water
  • 1⁄2 cup flour
  • 1⁄2 cup corn starch
  • 2 cup vegetable oil (for frying)

Instructions

1. Rinse mussels under tap water and drain.
2. Place mussels in a heavy bottom pan with ½ cup of water and juice from 1 lemon.
3. Cover and place on high heat for 5-7 minutes or until shells fully open.
4. Remove mussels from pot and take the meat out of the shells, set aside.


Spicy Tempura Batter:
1. Sift flour cornstarch and chili powder together.
2. Beat the egg slightly.
3. Add the chipotle liquid and ice water.
4. Incorporate the dry ingredients to the liquid mixture. Be sure not to over mix. Heat oil to 350 degrees F.
5. Dredge mussels in batter and carefully place in hot oil.
6. Fry for 2-3 minutes until crispy.
