Ingredients
- 2 lb fresh cultured blue mussels
- 1 cup water
- 1⁄4 cup parsley sprigs
- 1 clove large garlic
- 1⁄4 cup olive oil
- 2 tbsp lemon juice
- 2 tbsp white vermouth
- 1⁄4 tsp salt
- 1 dash pepper
Instructions
- Rinse fresh blue mussels in tap water. Steam in water or white wine just until shells open. Do not overcook. Discard any mussel that does not open.
- Arrange mussels in shells on a serving platter.
- Chop parsley and garlic in a blender. Add olive oil, lemon juice, vermouth, salt and pepper and blend.
- Pour marinade over mussels in shells. Cover and chill for one hour.
