Ingredients
- 4 lb fresh blue cultured mussels
- 2 cup dry white wine
- 1⁄4 cup olive oil
- 4 clove garlic-crushed
- 4 oz anchovy fillets
- 1⁄2 tsp hot pepper flakes
- 2 tbsp vinegar
- 2 tbsp parsley-chopped
Instructions
1. Rise fresh blue cultured mussels in tap water.
2. In a large pot, bring the wine to a simmer. Add the mussels, cover and cook until all mussels have opened, discard any that do not open.
3. Remove mussels, increase heat and reduce the liquid to 2/3 cup. Remove cooled mussels from shells and discard shells.
4. In a large sauté pan, heat the olive oil and add the garlic. Sauté until slightly browned, add the anchovies and chilli flakes and stir.
5. Add the mussels, reduced cooking liquid and vinegar and simmer 1 to 2 minutes. Remove from heat and allow cooling.
6. Place mixture in a large bowl, cover tightly with plastic wrap and refrigerate for several hours or overnight.
7. Add the parsley, toss well and serve.
