Ingredients
- 4 lb fresh blue cultured mussels
- 1 1⁄2 cup bread crumbs
- 1 tsp oregano
- 1 tsp black pepper
- 1⁄2 cup parsley-chopped
- 1⁄3 cup olive oil
- 1 cup crushed tomatoes
- 1⁄2 cup white wine
Instructions
1. Rise fresh blue cultured mussels in tap water.
2. Steam open mussels (retain broth) in a pot, covered. When done, discard top shell and any mussels that do not open.
3. Place mussels in a single layer in a baking dish, scatter bread crumbs, oregano, and parsley over mussels. Drizzle with oil, and bake at 450 degrees for 5 minutes
4. Mix tomatoes, wine, and mussel broth. Ladle over mussels, and bake an additional 10 minutes.
