Ingredients
- 36 fresh blue cultured mussels
- 1⁄2 cup flour
- 1 egg white, beaten
- 1⁄4 cup olive oil
- 1 lemon, sliced into pieces
- dash salt & pepper
Instructions
Batter:
1. Mix the flour, 3 tbsp of olive oil, salt pepper and enough water to make a medium thick batter.
2. Let sit for 20 minutes then mix in egg white.
Prep:
1. Rise fresh blue cultured mussels in tap water.
2. Steam open mussels in a covered pot and remove from shell. Discarding any shells that do not open.
3. Heat oil in a deep pan, dip mussels in the batter and fry until crisp.
4. Drain on paper towel and serve with lemon
