Ingredients
- 24 fresh blue cultured mussels
- 1 small onion, chopped
- 4 clove garlic, minced
- 2 can plum tomatoes
- 1⁄4 cup olive oil
- 1 1⁄5 tsp oregano
- 4 tbsp parsley, chopped
- 4 tbsp basil, chopped
- dash salt and pepper
- dash red pepper flakes
- 1 loaf, crusty bread
Instructions
1. Rise fresh blue cultured mussels in tap water.
2. Heat olive oil in a large pot with lid. Add onion and garlic and simmer till onions are translucent.
3. Add the tomatoes and break them up a bit with a wooden spoon, add oregano, salt, pepper, parsley, basil, and red pepper flakes. Cook on medium for about 20 minutes.
4. Add mussels, cover and simmer until mussels open, discarding any that do not open. Remove top shells, pour into large dish and serve with plenty of crusty bread
