Steamed Mussels

Ingredients

  • 2 tbsp celery, diced
  • 2 tbsp onion, diced
  • 6 lemon wedges
  • 1 lb fresh cultured blue mussels
  • 1⁄2 cup water, dry white wine, or beer (optional)
  • 1 pinch cracked black pepper, to taste
  • 1⁄4 margarine or butter, melted
  • 1 pinch cayenne pepper

Instructions

  1. Rinse the fresh blue mussels in tap water.
  2. Place water, wine or beer, celery, onion and mussels in a 5 qt (4 ¾ L) pan.
  3. Cover and steam over high heat until mussels open (5-8 minutes).
  4. Squeeze lemon juice over mussels, sprinkle with pepper and serve with melted butter or margarine for dipping.
