Blue Mussel Casserole

Ingredients

  • 2 lb fresh cultured blue mussels
  • 1 tbsp butter
  • 250 g can cream of mushroom or asparagus soup
  • 2 tbsp sherry
  • 1 pinch black pepper, freshly ground

Instructions

  1. Rinse fresh blue mussels in tap water.
  2. Remove meat from shells by steaming. 
  3. Grease a casserole dish with the butter and place mussel meat in it. 
  4. Top with soup and add the sherry.   
  5. Sprinkle with freshly ground black pepper. 
  6. Bake in a moderate oven for 25 minutes. 
  7. Serve immediately with rice or vegetables.
