Cream Sauce Beer and Garlic Steamed Mussels

Ingredients

  • 2 can beer
  • 1 tsp butter
  • 1 juice of lemon
  • 1 clove garlic, chopped
  • 250 ml 35% whipping cream
  • 1 tsp salt
  • 3 lb fresh cultured blue mussels
  • 1⁄2 cup red onion, chopped
  • 1⁄4 cup parsley, chopped

Instructions

  1. Rinse fresh blue mussels in tap water and set aside.
  2. In large stockpot, place beer, salt, butter and lemon juice. Cover and simmer.
  3. Add mussels, chopped red onion and chopped garlic. Steam until mussels open.
  4. To reserve juice, add whipping cream and reduce to 2 cups.
  5. Add chopped parsley and pour over mussels.
