Description

Fresh Blue Mussels in an exquisite white wine cream sauce with bacon and parmesan. The only thing more pleasing than the taste is how easy it is to make.

Ingredients

  • 4 lb fresh cultured blue mussels
  • 1 clove garlic, finely chopped or crushed
  • 2 shallots or ½ a medium onion, finely chopped
  • 1 tbsp butter
  • 2 bay leaves
  • 1 sprig thyme
  • 1⁄2 cup white wine
  • 1⁄2 cup cream
  • 4 slices bacon
  • 6 tbsp parmesan shavings
  • 1⁄4 bunch parsley chopped

Instructions

  1. Rinse the fresh blue mussels in tap water.
  2. Saute the bacon, shallots and garlic gently in the butter.
  3. When soft, turn up the heat, add the fresh blue mussels, thyme, bay leaves & wine, then cover and steam 4 or 5 minutes. The fresh blue mussels should be fully open.
  4. Add the cream and parmesan, bring to the boil, take off the heat, add the parsley.
  5. Check the seasoning, it may need a little pepper, then serve immediately.
  6. An alternative to this recipe is to remove the mussel meat and serve by itself in individual plates.
