White Wine Mussel Marinara

Ingredients

  • 2 lb fresh cultured blue mussels
  • 1 clove garlic, minced
  • 1⁄4 cup olive oil
  • 1⁄4 cup dry white wine
  • 1⁄2 tsp chilli peppers
  • 1 bunch fresh parsley, finely chopped

Instructions

  1. Rinse fresh blue mussels in tap water and set aside.
  2. Sauté garlic in oil until lightly browned. Add fresh blue mussels, wine, chilli peppers, and parsley.
  3. Cover and cook for 5-7 minutes, or until mussels are open.
  4. Pour into a large bowl and serve with crusty bread or potato wedges.
