Mussels with Penne Pasta

Ingredients

  • 3 lb fresh cultured blue mussels
  • 1⁄2 cup water
  • 500 g penne pasta
  • 1 large onion, chopped
  • 2 clove garlic, crushed
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1 cup cauliflower florets
  • 1 cup broccoli florets
  • 3 tbsp sundried tomatoes, chopped
  • 1⁄4 cup black olives, chopped
  • 1⁄2 cup mushrooms, chopped
  • 1⁄2 cup cream
  • 1⁄4 cup white wine
  • 1 pinch basil, rosemary, thyme
  • 1 pinch salt and pepper, to taste

Instructions

  1. Rinse fresh blue mussels in tap water. Add water to a large covered pot. Add the mussels and cover. Steam 5 to 7 minutes , cool and remove from shell. Set aside.
  2. Cook pasta according to package directions.
  3. In a sauce pan, gently sauté onion and garlic. Add green and red peppers, cauliflower and broccoli, sundried tomatoes, black olives, and mushrooms. Add herbs and seasoning and stir fry gently for 1 to 2 minutes.
  4. Add mussels, cream, and white wine. Simmer for a few minutes. Pour over cooked pasta and grate some parmesan cheese over top.
  5. Garnish with chopped parsley. Be adventurous and add shrimp and scallops, too.
