Ingredients
- 3 lb fresh cultured blue mussels
- 1⁄2 cup water
- 500 g penne pasta
- 1 large onion, chopped
- 2 clove garlic, crushed
- 1 green pepper, chopped
- 1 red pepper, chopped
- 1 cup cauliflower florets
- 1 cup broccoli florets
- 3 tbsp sundried tomatoes, chopped
- 1⁄4 cup black olives, chopped
- 1⁄2 cup mushrooms, chopped
- 1⁄2 cup cream
- 1⁄4 cup white wine
- 1 pinch basil, rosemary, thyme
- 1 pinch salt and pepper, to taste
Instructions
- Rinse fresh blue mussels in tap water. Add water to a large covered pot. Add the mussels and cover. Steam 5 to 7 minutes , cool and remove from shell. Set aside.
- Cook pasta according to package directions.
- In a sauce pan, gently sauté onion and garlic. Add green and red peppers, cauliflower and broccoli, sundried tomatoes, black olives, and mushrooms. Add herbs and seasoning and stir fry gently for 1 to 2 minutes.
- Add mussels, cream, and white wine. Simmer for a few minutes. Pour over cooked pasta and grate some parmesan cheese over top.
- Garnish with chopped parsley. Be adventurous and add shrimp and scallops, too.
