Ingredients
- 2 lb fresh blue cultured mussels
- 4 tbsp olive oil
- 1 tbsp dry white wine
- 1 tbsp lemon juice
- 2 spring onions, finely chopped
- 3 tbsp parsley, chopped
- black pepper, freshly ground
Instructions
1. Rinse the fresh blue mussels in tap water. Place in a large saucepan with a small amount of water on high heat. Cover and let steam until shells open (5 – 7 minutes)
2. When the mussels have cooled, remove the mussel meat from shells
3. Add fresh blue mussel meat to remaining ingredients and toss thoroughly.
4. Allow to marinate in refrigerator 1/2 hour before serving.
