Argentine Mussel Soup Recipe

Ingredients

  • 1 onion, finely chopped
  • 1 pinch saffron
  • 2 1⁄2 pint fresh fish stock
  • 3 tbsp long grain rice
  • 1⁄2 lb fresh mussels chopped
  • 3 tbsp vegetable oil
  • 1 tbsp parsley, frshly chopped
  • 1 pinch salt and pepper, to taste

Instructions

  1. Heat the oil in a large saucepan, add the onion and fry until lightly browned.
  2. Add the stock and the saffron and simmer for 5 minutes.
  3. Add the rice and simmer for 10-15 minutes until just tender.
  4. Add the chopped mussels, salt and pepper, mix well, cover and continue to simmer for a further 10 minutes. Serve immediately.
