Ingredients
- 2 lb fresh blue cultured mussels
- 1 1⁄2 cup bottled clam juice
- 3 ripe tomatoes, chopped (about 1 1/2 cups)
- 1⁄4 cup fresh lime juice
- 3 tbsp hot pepper sauce
- 1 tbsp tomato paste
- 5 tbsp unsalted butter, cut into 1/2 inch cubes
- 1 cup chopped fresh cilantro
- 3⁄4 cup thinly sliced green onions
- 1 loaf, crusty bread
- dash salt and pepper
Instructions
1. Rinse fresh blue mussels in tap water.
2. Bring ingredients 2-6 to a boil in a large pot, stirring occasionally.
3. Add mussels and butter. Cover and cook until mussels open, about 3-5 minutes. Discard any shells that do not open.
4. Stir in cilantro and green onions. Season with salt and pepper.
5. Divide among bowls and serve with crusty bread.
